Preparation & chilling

Prepare serving bed

Place a shallow bowl or serving plate in the refrigerator to chill for at least 10 minutes. Shortly before serving, arrange a layer of ice cubes in the bowl and set a small chilled dish on top to hold the caviar tin so it remains cold while presented.

Chill caviar

Keep the Osetra caviar refrigerated until ready to serve. Remove it from the refrigerator just before opening to minimize temperature change. Do not let the caviar sit at room temperature for more than a few minutes.

Prep crème fraîche and shallot

In a small bowl, fold the crème fraîche gently to loosen its texture. Stir in the finely minced shallot and 1 teaspoon of the chopped capers. Reserve a spoonful of this mixture to offer alongside the caviar for guests who prefer a creamy accent.

Chives and capers

Thinly slice the chives and set aside half for sprinkling directly on the caviar and half for the crème fraîche. Roughly chop the remaining capers and keep them in a tiny bowl for optional use on toast or blini.

Prepare blini/toasts

If using blini: warm them briefly in a skillet over low heat with a light smear of butter (about 1–2 minutes per side) until just heated through; keep warm covered. If using melba toasts or crackers: lightly butter each piece with the room-temperature unsalted butter and arrange on a serving board.

Plating & serving the caviar

Open and skim

Open the caviar tin carefully. If there is any protective film or rind, peel it back. Use the mother-of-pearl (or another non-metallic) spoon to gently skim the surface of the caviar to remove any excess liquid or irregular pieces. Do not press or mash the eggs.

Transfer to chilled dish

Spoon the desired amount of Osetra caviar into the small chilled serving dish placed on the ice bed. Do not overfill; leave room for a gentle mound. Keep the remainder of the tin chilled in the refrigerator or on ice until needed.

Garnish delicately

Lightly sprinkle a small pinch (about 1/4 tsp) of chopped chives over the top of the caviar. Optionally add a few tiny pieces of chopped caper for contrast. Place a few microgreens or a small herb sprig beside the dish for visual appeal. Do not cover or mix the caviar — garnishes should be minimal to allow the Osetra flavor to shine.

Serve with accompaniments

Present the caviar with the prepared blini or buttered toasts, a small bowl of the crème fraîche mixture, a bowl with the remaining chopped capers and shallot, and lemon wedges. Instruct guests to use the non-metallic spoon to transfer a small amount of caviar to a blini or toast, add a dab of crème fraîche if desired, and finish with a squeeze of lemon to taste.

Storage after opening

Return the remainder of the caviar to its tin, cover, and place on ice in the refrigerator. Consume within 48 hours for best quality. Keep the tin cold and unopened until needed; avoid metal utensils and strong-flavored foods that can overwhelm the eggs.
