Chill and prepare serving

Prepare ice bed

Place 2 cups crushed ice in a shallow serving bowl or on a platter large enough to hold the caviar tin. Put the small chilled serving bowl on top of the ice to create a cold nest for the caviar.

Keep the caviar refrigerated until ready to serve. Remove the caviar from the refrigerator at the last possible moment (no more than 10 minutes before serving) and keep the tin chilled on the ice bed while you prepare accompaniments.

Make chive crème fraîche

In a small bowl, gently fold 2 tablespoons of crème fraîche with 1 teaspoon finely chopped chives, 1/2 teaspoon lemon zest, and 1/2 teaspoon fresh lemon juice. Taste and adjust lemon or chive to preference. Transfer to a small chilled bowl and refrigerate until serving.

Place remaining garnishes — extra chopped chives, microgreens or baby dill — in small separate bowls for guests to add if desired.

Warm and toast blini or brioche

If using blini: warm them in a dry skillet over low heat for 30–60 seconds per side until just warmed, keep covered to remain soft. If using brioche rounds: lightly brush each round with a little softened butter or neutral oil and toast in a skillet over medium heat for 1–2 minutes per side until golden and crisp at the edges. Keep warm but not hot—caviar should not be exposed to heat.

Arrange 8 blini or brioche rounds on a small serving plate alongside the chilled caviar bowl.

Open and transfer caviar

Using clean dry hands or a towel, open the caviar tin just before serving. With a mother-of-pearl spoon (or other non-metal utensil), gently lift portions of the Osetra caviar and transfer the tin into the chilled bowl set on the ice bed. Do not stir or mash the roe.

Place the bowl of chive crème fraîche, small bowls of chopped chives and microgreens, and the blini/brioche on the table. Serve the caviar by allowing guests to place a small dollop (~1/2 teaspoon) of crème fraîche on a blini, then top with 1/4–1/2 teaspoon caviar, finishing with a few chives or microgreens if desired.

Advise guests to eat the caviar in one bite to appreciate the texture and flavor. Use the mother-of-pearl spoon for serving to avoid metallic taste. Keep any leftover caviar refrigerated and consume within 24–48 hours per producer recommendations.
