Prep
Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone baking mat and set aside. Measure out all ingredients so they are ready.
Toast Pecans (optional but recommended)
Place the pecan halves in a single layer on the lined baking sheet and toast in the preheated oven for 6–8 minutes, until fragrant and warmed through. Watch closely to avoid burning. Remove from oven and set the baking sheet aside; toasting helps develop flavor and shortens final cooking time.
Combine Sugars and Spices
In a medium heavy-bottomed skillet or saucepan, combine the granulated sugar, brown sugar, ground cinnamon, and salt. Stir them together over medium heat until the sugar mixture is evenly distributed (about 30 seconds).
Cook Syrup
Add the butter and water to the sugar-spice mixture. Cook over medium heat, stirring continuously, until the butter melts and the mixture comes to a gentle simmer. Continue cooking, stirring frequently, until the sugar dissolves completely and the syrup becomes slightly thickened and bubbly, about 3–5 minutes.
Coat Pecans
Reduce heat to medium-low. Add the toasted pecans to the skillet and stir quickly to coat every piece in the syrup. Continue stirring and cooking for 2–4 minutes, until the syrup begins to crystallize onto the nuts and they look glossy but slightly tacky. If using cayenne, add the pinch now. Stir in the vanilla extract during the last 30 seconds of cooking.
Dry and Separate
Immediately spread the coated pecans in a single layer on the prepared baking sheet, separating any clusters with a fork or two. Use a spatula to avoid scraping the pan residue. Sprinkle a light extra pinch of salt over the top if you like a more pronounced sweet-salty contrast.
Finish in Oven
Return the baking sheet to the oven for 6–8 minutes to finish drying and crisping the candy coating. This step helps ensure the coating hardens and the pecans become crunchy. Remove from oven and allow to cool completely on the baking sheet—cooling will further harden the coating (about 20–30 minutes).
Break Up and Store
Once cool, break apart any nuts that stuck together into individual pieces with your fingers. Transfer the candied pecans to an airtight container. They keep well at room temperature for up to 2 weeks, or refrigerated for up to 1 month. For longer storage, freeze up to 3 months in a sealed freezer bag.
