Examine the bottle for any sediment or damage. If the bottle is older (5+ years), allow to stand upright for 24 hours to let sediment settle. Cut the foil and clean the neck with a clean cloth. Use a waiter’s corkscrew to remove the cork slowly and steadily, avoiding sudden jerks that can agitate sediment.

Inspect and open

If you want to aerate the wine or if the wine is young and tannic, gently pour the wine into a decanter. Pour in a steady stream to expose the wine to air; stop when you near any visible sediment in the bottle. Allow the decanter to sit for 20–40 minutes to open up flavors. If the bottle is very old and delicate, you may prefer to pour directly into glasses, watching for sediment.

Decant (recommended)

Serve the Cabernet in large Bordeaux-style glasses at 60–65°F (15–18°C). Pour about 5–6 ounces (150–180 ml) per serving. Hold the glass by the stem to avoid warming the wine with your hand. Encourage swirling to release aromatics before tasting.

Take a moment to observe the color and clarity, then swirl and inhale to identify aromas (blackcurrant, dark cherry, cedar, tobacco, leather). Take a small sip, let it coat the palate, and note structure: acidity, tannin, body, and finish.
