Marinate the Chicken
In a large bowl, combine the buttermilk, honey, and hot sauce. Add the chicken pieces and ensure they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for best results.
Prepare the Coating
In a separate bowl, mix together the flour, paprika, garlic powder, onion powder, black pepper, cayenne pepper, and salt until well combined.
Coat the Chicken
Remove the chicken from the buttermilk marinade and allow excess liquid to drip off. Dredge each piece in the flour mixture, ensuring it is fully coated. Shake off any excess flour.
Heat the Oil
In a heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Chicken
Carefully add the coated chicken pieces to the hot oil, ensuring not to overcrowd the pot. Fry for about 12-15 minutes, turning occasionally, until golden brown and cooked through (internal temperature should reach 165°F/74°C).
Drain and Serve
Once cooked, remove the chicken from the oil and place it on a wire rack or paper towels to drain excess oil. Serve hot with your favorite dipping sauces.
