1. Inspect the bottle

Check the bottle for label details and vintage (2016). Note the producer (Heinz Eifel) and any tasting notes on the back label to inform pairings and serving temperature.

2. Chill to appropriate temperature

Place the Eiswein in the refrigerator for at least 90 minutes before serving to reach an ideal serving temperature of about 8–10°C (46–50°F). If you're short on time, place the bottle in an ice bucket with a 1:1 mix of ice and water for 15–20 minutes.

3. Select glassware

Use small dessert or Port-style glasses that concentrate aromas. Ensure glasses are clean, free of detergent residue, and at room temperature or slightly chilled.

4. Pouring

Wipe the bottle neck with a towel. Pour small portions of 60–90 ml (2–3 oz) per glass to let guests appreciate the concentrated sweetness and aromatics. Fill only to the widest part of the glass to allow aroma concentration above the wine.

5. Tasting sequence (optional)

If serving with multiple desserts or cheeses, taste the Eiswein on its own first to note its nose and palate (stone fruit, honey, apricot, citrus, balancing acidity). Then sample with each pairing, cleansing the palate with plain water between pairings.

6. Prepare tools before guests arrive: ensure refrigerator or wine fridge is set correctly; have an ice bucket ready if you plan to use one; set out glasses and napkins so pouring is smooth.

7. When finished pouring, re-cork the bottle if there is any leftover and store upright in the refrigerator. Eiswein keeps well for several days when refrigerated, though aromatics and freshness are best within 1–3 days of opening.
