Soda Base

Method

Soda Base

1

Make a quick citrus syrup

In a small heatproof bowl or measuring cup, combine the granulated sugar with the 2 tablespoons cold water. Stir until most of the sugar is wet. If you prefer the sugar fully dissolved, microwave in 15-second bursts, stirring between, until the sugar dissolves (about 30–45 seconds), or warm gently on the stovetop until dissolved. Allow to cool slightly.

2

Add citrus flavors

Stir the fresh lime juice, fresh lemon juice, lime zest, and lemon zest into the cooled sugar syrup. Taste and adjust: add another 1/2 teaspoon lemon or lime juice if you want brighter citrus. The syrup should be mildly sweet and noticeably citrusy but not overpowering.

3

Combine with carbonated water

Fill a tall glass with the ice cubes. Pour the citrus syrup over the ice. Slowly pour 2 cups (about 480 ml) of very cold carbonated water into the glass to preserve fizz. Stir gently once or twice with a long spoon to combine (avoid vigorous stirring to keep carbonation).

4

Garnish and serve

Taste and adjust sweetness or acidity: add an extra teaspoon of syrup for sweeter soda or a squeeze of lemon/lime for more tang. Garnish with a lemon and/or lime slice if desired. Serve immediately while carbonated.
