Method
Cocktail
- 1
Prepare prickly pear purée (if needed)
If you don't have prickly pear syrup, peel and cube 2 medium prickly pears, then place flesh in a blender and purée until smooth. Strain through a fine mesh sieve to remove seeds and pulp. Yield ~2–3 oz. Chill before using.
- 2
Add 2 oz pear vodka, 1 oz peach schnapps, 1 oz prickly pear purée (or syrup), 0.5 oz fresh lime juice, 0.25 oz fresh lemon juice and 0.25 oz simple syrup (omit or reduce if purée is sweet) into a cocktail shaker.
- 3
Add 2 dashes orange bitters to balance the sweetness.
- 4
Fill the shaker with ice (about 1 cup) and shake vigorously for 12–15 seconds until the outside of the shaker is frosty and well chilled.
- 5
Double-strain the mixture through a fine mesh strainer into a chilled coupe or martini glass to remove any remaining seeds or ice shards.
- 6
Garnish with a thin pear slice and a peach slice on the rim. Add a sprig of mint for aroma if desired.
- 7
Serve immediately. Optionally, for a longer drink, pour over fresh ice in a rocks glass and garnish the same way.
