Prep

    Remove Impossible patties from packaging and let sit at room temperature for 10 minutes while you prepare toppings and buns. This helps them cook more evenly.

    Slice the tomato into 1/4-inch (6 mm) thick slices. Place on a plate, sprinkle with 1/4 tsp kosher salt, and set aside to draw out excess moisture.

    Peel and thinly slice the onion into rings or half-rings. Separate lettuce leaves, wash and dry them thoroughly.

    Split the buns and spread vegan butter or oil lightly on cut sides.

Cook Patties & Melt Cheese

    Heat skillet

    Heat a heavy skillet or cast-iron pan over medium-high heat until hot, about 2–3 minutes. Add 1 tablespoon vegetable oil and swirl to coat.

    Season both sides of each Impossible patty with 1/4 tsp salt and a pinch of black pepper (total 1/2 tsp salt and 1/4 tsp pepper across patties).

    Place patties in the hot skillet without overcrowding. Cook 3 minutes on the first side without pressing; this allows a crust to form.

    Flip patties and cook 2–3 more minutes for medium; cook up to 4 minutes if you prefer more well-done. Internal temperature should reach 165°F (74°C) recommended by manufacturer, but use color and texture as guides.

    During the last 30–45 seconds of cooking, place a vegan cheddar slice on each patty. Cover the pan with a lid to trap steam and melt the cheese, about 30–45 seconds.

    Remove patties to a plate and tent loosely with foil to keep warm for 1–2 minutes while toasting buns.

Toast Buns

    Reduce heat to medium-low. Place buttered cut sides of the buns in the same skillet, buttered side down. Toast 1–2 minutes until golden and slightly crisp. Remove from pan.

    If desired, spread 1 tablespoon vegan mayonnaise on each bottom bun and 1/2 teaspoon mustard on each top bun.

Assemble Burgers

    Place one lettuce leaf (or two smaller leaves) on each bottom bun to create a moisture barrier.

    Lay a tomato slice on top of the lettuce.

    Place the hot Impossible patty with melted vegan cheddar on top of the tomato.

    Top each patty with a few slices of onion (amount to taste).

    Close with the top bun. Press gently to compact briefly, then serve immediately.

Serving & Tips

    Serve the Impossible Burger hot with fries, chips, or a side salad. Leftover patties can be refrigerated up to 3 days; reheat gently in a skillet to preserve texture.
