    Preheat and prep

    Preheat your waffle iron according to manufacturer's instructions to medium-high heat. Lightly brush or rub the waffle plates with about 1 teaspoon of the unsalted butter so waffles won't stick; keep remaining butter for serving.

    In a medium bowl whisk together 1.5 cups all-purpose flour, 3 tablespoons granulated sugar, 1 teaspoon baking powder, and 1 teaspoon salt until evenly distributed.

    Mix wet ingredients

    In a separate bowl or large measuring cup whisk the egg, 1 cup whole milk, 3 tablespoons melted unsalted butter (cooled slightly), and 1 teaspoon vanilla extract until smooth and homogeneous.

    Make batter

    Pour the wet ingredients into the dry ingredients. Using a rubber spatula or whisk, fold gently until just combined. Small lumps are fine; do not overmix or the waffles will be tough. Let the batter rest 5 minutes while the waffle iron finishes preheating — this helps hydrate the flour and yields lighter waffles.

    Cook waffles

    When the waffle iron is ready, scoop a portion of batter (about 1/2 to 3/4 cup depending on your iron size) onto the center of the lower plate. Close the lid and cook until the waffle is golden brown and crisp, about 3–5 minutes, or according to your waffle iron's indicator. Repeat with remaining batter, brushing the plates lightly with the remaining butter if needed between batches.

    Add sugar topping

    As each waffle comes off the iron, immediately sprinkle about 1 teaspoon of granulated sugar evenly over the hot surface. The heat will dissolve the sugar slightly and create a delicate, sweet surface crunch. (If you prefer no visible sugar, skip this step and stir sugar into the batter instead — about 1 tablespoon additional.)
