Pineapple-Orange Juice

Prepare fruit and juices
If you don't have bottled juice, peel and core 1 small pineapple and cut into chunks (about 1 cup). Juice 2–3 oranges to yield about 3/4 cup fresh orange juice. For maximum flavor use freshly squeezed juices.

Place the pineapple chunks, fresh pineapple juice and fresh orange juice in a blender. Blend on high for 20–30 seconds until smooth and homogenous.

Add 1 tablespoon honey or agave and 1 teaspoon fresh lime juice to the blender. If using lime zest, add 1/4 teaspoon now. Blend another 5–10 seconds to incorporate and to slightly froth the mixture.

Taste the mixture. If it needs more sweetness, add up to 1 additional teaspoon honey/agave and blend briefly. If it tastes flat, add another 1/4 teaspoon lime juice.
Chill & Serve

Add 1/2 cup cold water or sparkling water to the blender to adjust consistency. For a lighter, fizzy drink use sparkling water and stir gently by hand rather than blending to retain bubbles.

Fill two tall glasses with ice (about 1/2 cup ice per glass). Pour the pineapple-orange mixture evenly over the ice.

Garnish each glass with a mint sprig and a thin slice of pineapple or orange on the rim.

Serve immediately chilled. Stir once before drinking if sparkling water was used to redistribute bubbles.
