    Cut and freeze

    Unwrap the mozzarella and cut into 16 even sticks about 3 inches long and 1/2 inch to 3/4 inch thick. Place the sticks on a parchment-lined baking sheet in a single layer and freeze uncovered for 1 hour (this helps the cheese hold its shape during frying).

    Prepare dry mixes

    In a shallow bowl or plate, whisk together the flour and cornstarch (if using) and set aside. In a second shallow bowl, beat the eggs with the milk until smooth. In a third shallow bowl, combine the plain breadcrumbs, panko (if using), grated Parmesan, Italian seasoning, garlic powder, onion powder, kosher salt, and black pepper; mix well.

    Double-coat the sticks

    Working in batches of 4–6 sticks so breading remains cold, dredge each frozen mozzarella stick first in the flour mixture, shaking off excess, then dip into the egg mixture, letting excess drip off. Press into the breadcrumb mixture to coat thoroughly. For a sturdier seal and less cheese leakage, return the coated sticks to the freezer for 15–30 minutes, then repeat the egg and breadcrumb dip for a double coating. Freeze again for at least 30 minutes before frying (longer is fine).

Frying

    Heat oil

    Pour oil into a deep, heavy pot or deep fryer to a depth of about 2–3 inches (leave space at top). Heat the oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small breadcrumb into the oil; it should sizzle and rise steadily without burning immediately.

    Fry the sticks

    Fry the frozen, breaded mozzarella sticks in small batches (3–5 at a time, depending on pot size) for 60–90 seconds — just until golden brown. Do not over-fry; the cheese can burst out if cooked too long. Use a slotted spoon or spider to remove sticks and transfer to a paper towel–lined baking sheet to drain. Keep batches warm in a 200°F (95°C) oven if necessary while you finish frying.

    Serve

    Allow the fried mozzarella sticks to rest for 1–2 minutes (hot inside). Serve immediately with marinara or your preferred dipping sauce.
