Strawberry Margarita

Method

Strawberry Margarita

  1. 1

    Prepare the glass

If you want a rim, rub the lime wedge around the outer rim of a rocks or margarita glass. Dip the rim into a small plate with salt or coarse sugar to coat. Set the glass aside.

  2. 2

    Make the strawberry puree

Place the hulled and quartered fresh strawberries in a blender or food processor. Add the fresh lime juice and simple syrup (or agave). Purée until smooth, about 20–30 seconds. If you prefer a very smooth texture, strain the puree through a fine mesh sieve into a measuring cup to remove seeds; use the strained puree. Yield should be ~3/4 to 1 oz of puree per cocktail depending on berry size.

  3. 3

    Combine cocktail ingredients

In a cocktail shaker, add the strawberry puree (use about 1.5 oz puree per cocktail), tequila (2 oz), orange liqueur (1 oz), and ice (fill shaker about halfway). Shake vigorously for 12–15 seconds until well chilled.

  4. 4

    Serve

Fill the prepared glass with fresh ice. Strain the shaken margarita into the glass. Taste and, if desired, add a splash (about 1/4 oz) more simple syrup or agave if you want it sweeter, or a squeeze of lime if you want it tarter.

  5. 5

    Garnish

Garnish with a strawberry slice on the rim and a lime wedge. Serve immediately.
