Cocktail Preparation

    Prepare blender and ingredients

    Add 2 oz Malibu rum, 1 oz peach schnapps, and 4 oz pineapple juice to a blender. Measure ingredients precisely for consistent flavor.

    Add ice cream

    Scoop 3 slightly softened scoops of vanilla ice cream into the blender on top of the liquids. Softening makes blending smoother and helps achieve a velvety texture; don’t let it melt completely.

    Blend to smooth

    Secure the blender lid and blend on medium-high for 20–30 seconds, or until the mixture is smooth and creamy with no visible ice cream lumps. If the mixture is too thick to blend, add 1–2 tablespoons (15–30 ml) pineapple juice and blend an additional 5–10 seconds.

    Adjust consistency and chill

    Taste and check consistency. If the cocktail is too boozy or strong, add 1 oz (30 ml) pineapple juice and pulse once to incorporate. If too thin, add a small additional scoop (about ½ scoop) of ice cream and blend briefly.

    Serve

    Pour the blended Islander into a chilled hurricane glass or large coupe. The drink should be thick and creamy but still pourable.

    Garnish (optional)

    Garnish with a pineapple wedge on the rim and a maraschino cherry on top or skewered. Serve immediately with a straw and a short spoon for scooping.
