Make the herb garlic butter
In a medium bowl, combine the cold unsalted butter, minced garlic, chopped parsley, chopped dill (if using), lemon zest, 1 tsp salt, and 1 tsp black pepper. Use a fork to mix until evenly distributed. Spoon the butter onto plastic wrap in four equal portions (about 2 tablespoons each), shape into logs, wrap tightly, and refrigerate until firm (at least 30 minutes) or freeze for 10–15 minutes to firm more quickly.

Prepare the chicken breasts
Using a sharp knife, place each chicken breast between two pieces of plastic wrap or in a resealable bag. Carefully pound to an even thickness of about 1/4–1/2 inch, working from the center outward. Pat dry with paper towels. Season both sides of each flattened breast with 1 tsp salt and 1 tsp black pepper (divide across breasts).

Fill and roll
Remove the chilled herb butter logs from the refrigerator. Place one butter log near the thicker end of each flattened breast. Fold the sides of the breast over the butter, then roll up tightly from the thick end to enclose the butter completely, tucking ends under to form a neat cylinder. Secure with kitchen twine or toothpicks if necessary. Place rolled breasts seam-side down on a tray and refrigerate for 15–20 minutes to help them hold shape.

Set up breading station
Place the flour in a shallow dish. In a second dish, whisk the two eggs with 2 tbs milk until blended. In a third dish, combine the panko breadcrumbs with 1 tablespoon grated Parmesan (if using). One at a time, dredge each rolled breast in flour, shaking off excess; dip into the egg wash; then press evenly into the breadcrumbs to coat completely. For a thicker crust, repeat the egg wash and breadcrumb step once more. Return coated breasts to the tray and refrigerate for at least 15 minutes to set the coating; chilling helps prevent butter leaking during cooking.

Shallow fry
Pour vegetable oil into a large skillet to reach about 1/4–1/2 inch depth and heat over medium heat until shimmering (about 350°F if using a thermometer). Add the coated breasts seam-side down and cook 3–4 minutes per side, turning carefully, until golden brown on all sides. Work in batches if needed to avoid crowding and drop the heat slightly if the crust browns too quickly. The goal is to brown the exterior and seal the coating; the interior will finish in the oven.

Finish in the oven
Preheat the oven to 375°F (190°C). Transfer the browned chicken breasts to a baking dish and bake for 20–25 minutes, or until the internal temperature reaches 160–165°F (71–74°C). Remove from oven and rest 5 minutes; the internal temperature will rise slightly and the butter will remain hot and contained. Remove any kitchen twine or toothpicks before serving.

Rinse the wild rice blend under cold water in a fine mesh sieve to remove dust. In a medium saucepan, melt 2 tbs butter over medium heat. Add the finely chopped shallot (or onion), diced celery, and diced carrot. Sauté until softened and fragrant, about 4–5 minutes.

Add the rinsed wild rice to the pan and stir for 1–2 minutes to coat the grains in butter and lightly toast. Pour in 4 cups low-sodium chicken stock (or water) and bring to a boil. Reduce heat to low, cover, and simmer according to package instructions (typically 35–45 minutes) until the grains are tender and liquid absorbed. If needed, add a few tablespoons of hot water during cooking.
