Burger Patties

    Prepare and portion beef

    Place 1 lb ground beef in a bowl. Handle as little as possible to avoid compacting. Divide into 4 equal portions (about 4 oz each). Gently form each portion into a round patty about 3/4-inch thick and slightly wider than the bun. Press a shallow dimple in the center of each patty with your thumb to help them cook evenly.

    Season patties

    Season both sides of each patty with kosher salt (about 1/4 tsp per side) and a light sprinkle of ground black pepper. If using, lightly brush or mix 1 tsp Worcestershire sauce into the exterior of the patties for added flavor.

    Cook patties

    Heat a heavy skillet or cast-iron pan over medium-high heat until very hot (about 2–3 minutes). Add 1 tbs vegetable oil and swirl to coat. Add patties, leaving space between them. Cook without moving for 3–4 minutes until a brown crust forms. Flip and cook 2–3 minutes for medium (adjust time +/- for desired doneness). In the last 30–45 seconds of cooking, place a slice of cheddar on each patty, cover the pan briefly (or add a lid) to melt the cheese.

    Toast buns

    While patties cook or immediately after, spread softened butter on the cut faces of 4 hamburger buns. Place buns cut-side down in a separate skillet over medium heat or on a griddle for 1–2 minutes until golden and toasted. Remove from heat and keep warm.

    Prepare vegetables

    Wash and dry lettuce leaves. Slice the tomato into 1/4-inch thick rounds (you should get about 3–4 slices). Thinly slice the red onion into rings. Have 2 pickle slices ready per burger.

Assembly & Condiments

    Spread condiments

    On the bottom half of each toasted bun, spread 1 tsp mayonnaise and 1 tsp ketchup. Spread 1/2 tsp yellow mustard on the top half of each bun (or to taste).

    Assemble burgers

    Place a lettuce leaf on the sauced bottom bun, add a slice or two of tomato, then the cheeseburger patty. Top the patty with 2 pickle slices and a few onion rings. Place the top bun over the onion to finish.

    Serve

    Serve immediately while hot with your choice of side (fries, chips, or salad).
