Shrimp & Marinade
Broiling & Serving
Method
Shrimp & Marinade
- 1
Prep shrimp
Pat the shrimp dry with paper towels. If shrimp are frozen, thaw completely in the refrigerator or under cold running water and drain well. Leave tails on or remove according to preference.
- 2
Make garlic marinade
In a medium bowl whisk together the olive oil, melted butter, minced garlic, lemon juice, lemon zest, chopped parsley, kosher salt, black pepper, and red pepper flakes (if using) until combined.
- 3
Marinate shrimp
Add the shrimp to the bowl and toss thoroughly so each piece is coated. Let sit at room temperature for 10–15 minutes (no more than 30 minutes) to allow flavors to meld. Stir once or twice while marinating.
Broiling & Serving
- 4
Preheat broiler
Position an oven rack about 4–6 inches from the broiler element. Preheat the broiler on high for at least 5 minutes. Line a rimmed broiler-safe baking sheet with foil for easy cleanup and lightly brush with 1 teaspoon olive oil or spray with nonstick spray.
- 5
Arrange shrimp
Remove shrimp from the marinade, allowing excess to drip back into the bowl. Arrange shrimp in a single layer on the prepared baking sheet, leaving a little space between pieces so they broil rather than steam.
- 6
Broil shrimp
Place the baking sheet under the hot broiler. Broil 2–3 minutes on the first side, watching closely—shrimp should turn pink and begin to curl. Flip each shrimp with tongs and broil an additional 1–2 minutes until opaque and just cooked through (total cook time 3–5 minutes depending on size). Do not overcook; shrimp will become rubbery.
- 7
Finish & serve
Remove shrimp from the oven. Spoon any remaining marinade that is safe (unused raw marinade should be discarded) or a little melted butter over the cooked shrimp. Sprinkle with extra chopped parsley and serve immediately with lemon wedges. Offer crusty bread, rice, or pasta to soak up the garlic butter if desired.
