Bring eggs to room temperature
Remove the eggs from the refrigerator about 10 minutes before cooking so they warm slightly — this helps even cooking and reduces chance of cracking.

Crack eggs to the side of the pan
Crack each egg into a small bowl or cup to ensure yolks stay intact. Gently slide the eggs into the pan spaced apart, toward one side of the pan so they sit 'on the side' of the skillet rather than the center. This positioning lets you easily spoon hot fat over the whites and keep yolks tender.

Let the eggs cook gently without moving for 2–3 minutes, until the whites are mostly set but slightly jiggly near the yolk. If you see the edges browning quickly, reduce heat to low.
