Prepare patties
Place ground chicken in a large bowl. Add 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder, 1/2 tsp onion powder and 1 tablespoon Worcestershire sauce. Mix gently with your hands or a fork until just combined—do not overwork (about 20-30 seconds). Divide mixture into 4 equal portions and form into patties about 3/4-inch thick and slightly wider than the buns to account for shrinkage. Make a shallow dimple in the center of each patty with your thumb to encourage even cooking.
Cook patties
Place patties on the hot grill or skillet. Cook without moving for 4-5 minutes on the first side until nicely browned. Flip once and continue to cook 4-6 minutes more, or until an instant-read thermometer inserted into the center reads 165°F (74°C). Avoid pressing down on the patties to retain juices.
Rest patties
Transfer cooked patties to a plate and loosely tent with foil. Let rest for 3-5 minutes to redistribute juices.
Toppings & Assembly
Prepare condiments
In a small bowl combine 1/2 cup mayonnaise, 1 teaspoon lemon juice, 1/8 teaspoon salt and a pinch (1/16 tsp) black pepper. Stir until smooth. Taste and adjust seasoning. This creates a light lemon mayo to brighten the burger.
Slice vegetables
Slice tomato into 1/4-inch thick rounds (about 4 slices). Thinly slice the red onion into rings and separate. Rinse and pat dry 4 lettuce leaves. Season tomato slices lightly with a pinch of salt if desired.
Assemble burgers
Spread about 1 tablespoon of the lemon mayo onto the bottom half of each toasted bun. Place one lettuce leaf on each bottom bun, top with a grilled chicken patty, then add a tomato slice (1 per burger) and a few red onion rings to taste. Spread additional mayo on the top bun if desired, then close the burger.
Serve
Serve burgers immediately while hot. Suggest serving with fries or a simple salad.
