Beer Base

Glass & Ice

Method

Prepare Glass

  1. 1

    Chill and fill

Chill a tall pilsner or pint glass in the freezer for 10 minutes if desired. Add 6 large ice cubes to the glass immediately before assembling.

Mixing

  1. 2

    Combine citrus and optional sweetener

In a small jigger or bowl, combine 0.5 fl oz fresh lime juice, 0.25 fl oz fresh lemon juice and, if using, 0.25 fl oz simple syrup. Stir briefly to blend. This balances the malt and bitterness of the non-alcoholic lager.

  2. 3

    Add club soda

Pour 2 fl oz chilled club soda into the glass over the ice to give the drink extra effervescence and a lighter mouthfeel.

  3. 4

    Add citrus mix

Slowly pour the combined citrus (and simple syrup, if used) into the glass with club soda to distribute flavor without flattening the bubbles.

  4. 5

    Top with non-alcoholic lager

Hold the beer bottle or can at a 45-degree angle and slowly pour 12 fl oz of cold non-alcoholic lager down the side of the glass so it gently layers and preserves carbonation. Pour steadily until the glass is nearly full, leaving ~1/2 inch headroom.

  5. 6

    Optional bitters & mint

If desired, add 1 dash of non-alcoholic Angostura-style bitters to the surface and slap a mint sprig between your palms to release aroma, then place it into the drink.

Garnish & Serve

  1. 7

Twist the orange peel over the glass to release oils, rub it on the rim if you like, and drop it into the drink. Float a lime wheel on top or perch it on the rim. Serve immediately with a straw or a long spoon.
