    Prepare bacon

    Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top if available. Arrange 8 slices of bacon in a single layer on the rack or directly on the foil. Bake 15–20 minutes, turning once if not using a rack, until crisp to your liking. Remove bacon to a plate lined with paper towels to drain and keep warm. (Alternatively, cook bacon in a skillet over medium heat 8–12 minutes, turning occasionally.)

    Prepare tomato and lettuce

    While bacon cooks, wash and dry 6 lettuce leaves thoroughly and set aside. Slice 1½ medium tomatoes into 6 even slices (about 1/4-inch thick). Lay tomato slices on a plate, season evenly with 1/2 teaspoon kosher salt and 1/4 teaspoon freshly ground black pepper; set aside to slightly macerate.

    Toast bread (optional)

    If you prefer toasted bread, lightly butter 4–6 slices (1 tablespoon butter divided) using about 1/2 teaspoon per slice. Heat a skillet or griddle over medium heat and toast buttered sides of bread until golden, about 1–2 minutes per side, or use a toaster and then spread butter on the hot bread.

    Assemble sandwiches

    Spread about 1 1/2 tablespoons of mayonnaise evenly on one side of each of 4 slices of bread. On two slices (the bottoms), layer 3 slices of bacon per sandwich, then place 3 tomato slices over the bacon, and top with 3 lettuce leaves. Spread remaining mayonnaise on the inside of the top slices of bread and place on top, mayo-side down. Press gently to compact.

    Optional trimming and serving

    If desired, trim crusts and cut each sandwich in half diagonally. Serve immediately while bacon is warm and bread is crisp. Makes 2 sandwiches (4 halves).
