    Make burger sauce

    In a small bowl combine mayonnaise, ketchup, yellow mustard, sweet pickle relish, lemon juice, 1/8 tsp salt and 1/8 tsp black pepper. Whisk until smooth. Taste and adjust seasoning. Refrigerate until ready to assemble.

    Cook bacon

    Heat a large skillet over medium heat. Add bacon strips in a single layer (work in batches if needed). Cook, turning occasionally, until evenly browned and crisp, about 8–12 minutes depending on thickness. Transfer cooked bacon to a paper towel–lined plate to drain.

    Form patties

    Divide the 1 lb ground beef into 4 even portions (about 4 oz each). Gently form into patties about 3/4 inch thick and slightly wider than buns. Make a shallow indentation in the center of each patty with your thumb to reduce puffing during cooking. Season both sides with kosher salt (about 1/4 tsp per side) and freshly ground black pepper.

    Cook patties

    Heat a cast-iron skillet or heavy pan over medium-high heat and add 1 tbs vegetable oil. When oil is shimmering and hot, add patties (work in two batches if pan is crowded). Cook without moving until a deep brown crust forms, about 3–4 minutes. Flip and cook another 2–3 minutes for medium, or longer to desired doneness. In the last 30–60 seconds of cooking, place a slice of cheddar on each patty, cover the pan briefly to melt the cheese.

Buns & Assembly

    Toast buns

    While patties finish, melt 2 tbs unsalted butter in a skillet or brush on the cut sides of the buns and toast cut-side down over medium heat until golden, about 1–2 minutes.

    Slice vegetables

    Slice the tomato into 4 even slices, thinly slice the red onion into rings, and wash/dry lettuce leaves.

    Assemble burgers

    Spread about 1 tbs of the prepared sauce on the bottom half of each toasted bun. Place a lettuce leaf, then a tomato slice and 2 pickle slices. Add the cheese-topped beef patty, then 1–2 slices of cooked bacon (use 1.5 strips per burger average). Top with a few onion rings, additional sauce on the top bun if desired, and close the burger. Serve immediately.
