    Bring ingredients to room temperature

    If you have time, remove the egg from the refrigerator for 5–10 minutes so it separates and cooks more evenly. This step is optional.

    Preheat pan

    Place a small nonstick or well-seasoned skillet over medium-low heat and add 1 teaspoon unsalted butter. Allow the butter to melt and foam but not brown, about 30–45 seconds.

    Crack the egg and cook

    Crack the egg into a small ramekin or bowl to check for shells. Gently slide the egg from the ramekin into the skillet. Let it cook undisturbed until the white is set and the edges are slightly lacy, about 2–3 minutes for a runny yolk (adjust 30–60 seconds longer for a firmer yolk). If you prefer, cover the pan with a lid for the last 30–60 seconds to help the top of the white finish without flipping.

    Season

    Immediately season the egg with a small pinch of salt and pinch of freshly ground black pepper.

    Finish and serve

    Use a spatula to lift the egg from the pan and transfer it to the side of the plate with the rest of the breakfast (or plate alone). Top with chopped chives or parsley and a dash of hot sauce or ketchup if desired. Serve hot.

Optional garnish / serving

    If using, sprinkle the chopped herbs over the cooked egg and serve the hot sauce or ketchup on the side so the diner can add to taste.
