Prepare the Shrimp
In a mixing bowl, combine the tempura batter mix and water to create a smooth batter. Season the shrimp with salt and pepper.
Fry the Shrimp
Heat the vegetable oil in a deep frying pan over medium-high heat. Dip each shrimp into the tempura batter, allowing excess to drip off, and carefully place them in the hot oil. Fry until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.
Assemble the Po Boys
Slice the submarine rolls in half. Spread a layer of chipotle aioli on the bottom half of each roll. Add a layer of shredded lettuce, followed by sliced tomatoes. Top with the crispy tempura shrimp, and drizzle with bang bang sauce. Close the sandwich with the top half of the roll.
Serve
Cut the Po Boys in half, if desired, and serve immediately with extra bang bang sauce on the side.
