Prep the Steak

Season the rib-eye steak with salt and black pepper on both sides. Heat olive oil in a skillet over medium-high heat.

Cook the Steak

Add the rib-eye steak to the skillet and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes before slicing.

Prepare the Bread

While the steak rests, preheat a pan or griddle over medium heat. Spread chipotle aioli on one side of each slice of jalapeno cheddar bread.

Assemble the Melt

On the non-aioli side of two slices of bread, layer sliced steak, pepper jack cheese, jalapeño slices, and tomato slices. Top with the other slices of bread, aioli side facing in.

Grill the Sandwich

Place the assembled sandwiches on the preheated pan or griddle. Grill for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

Serve

Remove from heat, cut in half, and serve immediately.
