Prepare the Chicken
Preheat a skillet over medium-high heat. Rub the chicken breasts with olive oil and season generously with blackening seasoning, salt, and pepper.
Cook the Chicken
Place the seasoned chicken breasts in the hot skillet and cook for about 6-7 minutes on each side, or until the chicken is cooked through and has a nice char. In the last minute of cooking, place a slice of pepper jack cheese on each breast to melt.
Prepare the Buns
While the chicken is cooking, slice the burger buns in half and toast them lightly in another skillet or in a toaster.
Assemble the Sandwich
Spread mayonnaise on the bottom half of each toasted bun. Add a layer of guacamole, followed by the cooked chicken breast with melted cheese, lettuce, and sliced tomato. Top with the other half of the bun.
Serve
Serve the blackened chicken sandwiches immediately, with additional guacamole or mayo on the side if desired.
