Prepare the Bang Bang Sauce

In a bowl, mix the mayonnaise, sweet chili sauce, and Sriracha together until smooth. Adjust the spice level to taste and set aside.

Prepare the Shrimp

In a medium bowl, set up a breading station with three bowls: one with cornstarch, one with beaten eggs, and one with panko breadcrumbs. Dip each shrimp into the cornstarch, then the egg, and finally coat with panko breadcrumbs.

Fry the Shrimp

Heat vegetable oil in a deep pan over medium-high heat. Once the oil is hot, carefully fry the breaded shrimp in batches until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

Assemble the Dish

In a large bowl, combine the coleslaw mix with a bit of the Bang Bang sauce. On a serving plate, arrange the coleslaw, place the fried shrimp on top, and drizzle with additional Bang Bang sauce. Garnish with sliced green onions.
