Prepare the Chicken
Season the chicken breasts with salt and black pepper. Heat a grill pan over medium heat and add a little olive oil. Cook the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from heat and let it rest.
Slice the Chicken and Tomatoes
Once the chicken has cooled slightly, slice it into thin strips. Slice the tomatoes into thin rounds.
Assemble the Panini
On one slice of ciabatta bread, spread a layer of pesto sauce, followed by a layer of alfredo sauce. Add the sliced chicken, tomatoes, and mozzarella cheese. Top with the other slice of ciabatta.
Grill the Panini
Preheat a panini press or grill pan. Brush the outside of the sandwich with olive oil. Grill the panini for about 4-5 minutes until the bread is golden brown and the cheese is melted.
Serve
Remove the panini from the grill, let it cool for a minute, then slice in half and serve warm.
