Preparation
Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and black pepper on both sides.
Dredge the Chicken
Set up a dredging station with three shallow bowls: one with flour, one with beaten eggs, and one with bread crumbs. Dip each chicken breast first in flour, coating evenly, then in the beaten eggs, and finally in the bread crumbs.
Cooking
Fry the Chicken
In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from skillet and drain on a paper towel.
Assemble the Dish
In a baking dish, spread 1 cup of marinara sauce on the bottom. Place the fried chicken breasts on top. Spoon the remaining marinara sauce over the chicken, then sprinkle with mozzarella and parmesan cheese.
Bake the Chicken Parmigiana
Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
Serving
Garnish and Serve
