Prepare chickpeas

If you prefer extra smooth hummus, peel chickpeas by gently pinching each one to release the skin. Rinse drained chickpeas under cold water and drain.

In a food processor, combine tahini and lemon juice. Blend 30 seconds, scrape sides, then blend another 20–30 seconds to whip tahini (this lightens texture).

Add garlic, olive oil, ground cumin and salt to the whipped tahini. Pulse to combine.

Add the chickpeas and blend until thick. With the processor running, add cold water, 1 tablespoon at a time, until hummus is smooth and creamy (about 2–3 tbs). Taste and adjust salt, lemon or cumin as desired. If hummus is too thick, add up to 2 more tablespoons water.

Transfer hummus to a shallow serving bowl and use the back of a spoon to create a shallow well in the center for toppings.

Soy-Glazed Button Mushrooms

Make glaze: in a small bowl mix soy sauce, brown sugar (or honey), rice vinegar, and minced garlic. Stir to dissolve sugar. Set aside.

Heat a large skillet over medium-high heat. Add neutral oil and butter. When butter is foaming, add mushrooms in a single layer. Let them sear without moving for 2–3 minutes until bottoms are golden.

Stir mushrooms, reduce heat to medium, and cook 2 more minutes until mostly cooked through and lightly browned.

Pour the soy glaze over the mushrooms and stir. Continue cooking 1–2 minutes until glaze thickens and mushrooms are coated. Season with freshly ground black pepper. Remove from heat and keep warm.

Schug (Quick Herb Hot Sauce)

In a small food processor or blender combine parsley, cilantro, green chile, garlic clove, ground cumin, lemon juice, salt and olive oil.

Pulse until herbs are finely chopped and emulsified into a loose green sauce. Taste and adjust salt, lemon or chile heat. If too thick, add a teaspoon of water or more olive oil to reach a spoonable consistency.

Assembly & Garnish

Spoon the warmed soy-glazed mushrooms into the well in the hummus.

Drizzle schug around or over the mushrooms as desired (about 1–2 teaspoons per serving).

Finish with a light drizzle of truffle oil (about 1 teaspoon), scatter chopped fresh parsley and toasted pine nuts if using, and dust a pinch of smoked paprika for color.

Serve immediately with warm pita, toasted flatbread or crudités.
