Tahini Ice Cream Base
Warm the dairy
In a medium saucepan, combine 1.5 cups whole milk and 1.5 cups heavy cream. Add 0.75 cup well-stirred tahini, 0.75 cup granulated sugar, 2 tablespoons light brown sugar, and 1/2 teaspoon fine sea salt. Warm over medium heat, whisking frequently, until the mixture is steaming and the sugars have dissolved — do not boil (about 6–8 minutes).
Temper the yolks
In a medium bowl, whisk 4 egg yolks until smooth. Gradually ladle 1/2 cup of the warm tahini–dairy mixture into the yolks while whisking constantly to temper (about 3 ladles). Then slowly whisk the tempered yolks back into the saucepan with the remaining warm mixture.
Cook to custard
Return the saucepan to low–medium heat and cook, stirring constantly with a wooden spoon or heatproof spatula, until the custard coats the back of the spoon and reaches about 175–180°F (80–82°C) — about 5–8 minutes. Do not let it boil.
Strain and cool
Remove from heat and stir in 1 teaspoon vanilla extract. Pour the custard through a fine-mesh sieve into a clean bowl to remove any cooked bits and ensure smoothness. Let cool at room temperature for 15–20 minutes, stirring occasionally to release steam.
Chill
Cover the bowl tightly with plastic wrap, pressing the wrap directly onto the surface of the custard to prevent a skin. Refrigerate until thoroughly cold, at least 4 hours or overnight for best texture.
Churn
Once chilled, churn the custard in an ice cream maker according to the manufacturer's instructions until it reaches soft-serve consistency (usually 20–30 minutes).
Assembly & Serving (Affogato)
Prepare espresso
Brew a fresh, hot single (or double if preferred) shot of espresso — about 30–60 ml per serving. Use freshly ground beans and brew just before serving so it is hot.
Pour espresso
Immediately pour the hot espresso shot over the ice cream at the table so the contrast between hot coffee and cold ice cream is preserved. The espresso should melt the ice cream slightly and create a creamy coffee-tahini mixture.
Garnish and finish
Optionally sprinkle 1 teaspoon toasted sesame seeds over the affogato and finish with a very light drizzle (about 1/2 teaspoon) of toasted sesame oil or extra tahini for aroma and visual appeal. Serve immediately with a small spoon.
