Pan-sear mushrooms
Heat a large skillet over medium-high heat until hot. Add 2 tbs olive oil and 1 tbs butter. When butter foam subsides, add the sliced mushrooms in a single layer (work in batches if needed). Do not stir for 2–3 minutes to allow browning, then stir or toss occasionally until deeply browned, about 6–8 minutes total.
Finish mushrooms
Add minced garlic and thyme, cook 30–45 seconds until fragrant. Season with 1 tsp salt and 1/2 tsp black pepper. Remove from heat and stir in 1 tsp lemon juice. Keep warm while assembling.
Caramelized Onions
After 10 minutes, when onions begin to soften, sprinkle 1/2 tsp brown sugar or drizzle honey and increase heat slightly for a few minutes to encourage caramelization, then reduce back to medium-low. Continue cooking and stirring occasionally until onions are deeply golden and sweet, about 20–30 minutes total. Remove from heat and set aside.
Cauliflower Tahini
Cook cauliflower
Bring a small pot of salted water to a boil. Add cauliflower florets and simmer until very tender, about 8–10 minutes. Drain well and let steam off any excess moisture for a minute.
Blend tahini
Transfer the cooked cauliflower to a food processor or blender. Add 4 tbs tahini, 2 tbs lemon juice, 4 tbs warm water, 1 minced garlic clove, 3/4 tsp salt and 1/4 tsp ground cumin. Blend until smooth and creamy, stopping to scrape down sides. If mixture is too thick, add an extra tablespoon of warm water until spreadable. Taste and adjust seasoning. Drizzle 1 tsp olive oil and pulse once to incorporate.
