Make syrup

Combine 1 cup granulated sugar and 1 cup water in a small saucepan over medium heat. Stir until the sugar fully dissolves and the mixture comes to a gentle simmer (do not boil aggressively).

Infuse mint

Remove the saucepan from heat, add 1 packed cup of fresh mint leaves to the hot syrup and press them gently with a spoon to submerge. Let steep for 15 minutes off the heat so the mint flavor infuses without turning bitter.

Cool and strain

After 15 minutes, strain the syrup through a fine-mesh sieve into a heatproof jar or bowl, pressing the leaves lightly to extract flavor. Discard the solids. Let the syrup cool to room temperature, then refrigerate in a sealed container. Syrup will keep up to 2 weeks refrigerated.

Prepare glasses (optional rim)

If rimming, rub a lime wedge around the glass rim, dip the rim into coarse sugar mixed with a pinch of lime zest to coat. Set glasses aside.

Muddle mint

In a cocktail shaker or a sturdy mixing glass, place 6 mint sprigs and 3 tablespoons mint simple syrup. Gently muddle 6–8 times to bruise the leaves and release oils—do not over-muddle into a paste (about 8–10 seconds).

Add lime

Add 1 cup fresh lime juice to the shaker. Add a handful (about 1 cup) of crushed ice, then cap and shake briefly (5–8 seconds) just to chill and marry the flavors.

Assemble

Fill four serving glasses evenly with crushed ice (about 1 cup each). Divide the muddled mixture evenly among the four glasses, straining to keep mint fragments out if you prefer a cleaner drink.

Top with soda

Top each glass with about 3/4 cup chilled club soda or sparkling water (3 cups total divided among four glasses). Stir gently once to combine.

Add finishing touches

For optional floral lift, add 1/2 teaspoon elderflower cordial or a dash (about 2 tsp total across drinks) of non-alcoholic sparkling wine split between drinks. Garnish each glass with a fresh mint sprig and a lime wheel or wedge. If desired, sprinkle a pinch of lime zest over the top.

Serve immediately with a straw or stirring spoon so drinkers can refresh the mint aroma. If making pitchers, scale ingredients and add soda just before serving to preserve fizz.
