Hummus
Prepare chickpeas
If using canned chickpeas, drain and rinse them. For extra-smooth hummus, remove and discard skins by pinching each chickpea between thumb and forefinger (optional).
With the processor running, add cold water 1 tablespoon at a time until the hummus becomes smooth and creamy (about 2 tablespoons total). Stop and scrape down the bowl as needed.
Transfer hummus to a serving bowl. Drizzle the reserved 1 teaspoon olive oil on top and sprinkle smoked paprika for garnish.
Tzatziki
Grate the cucumber and place it in a clean kitchen towel or cheesecloth. Squeeze firmly to remove as much moisture as possible (this prevents watery tzatziki).
In a medium bowl, combine the Greek yogurt, squeezed cucumber, minced garlic, lemon juice, chopped dill, 1 teaspoon olive oil, salt and pepper. Stir until smooth and well combined.
Taste and adjust seasoning — add more lemon, salt, or dill to preference. Chill in the refrigerator for at least 15 minutes to let flavors meld (can be made up to 24 hours ahead).
Muhammara
Toast the walnuts in a dry skillet over medium heat for 3–4 minutes, stirring frequently, until fragrant. Let cool slightly.
In a blender or food processor, combine the roasted red peppers, toasted walnuts, lemon juice, pomegranate molasses, smoked paprika, cumin, Aleppo pepper (if using) and salt.
Pulse until the mixture is fairly smooth but still has some texture. With the machine running, drizzle in 1 tablespoon olive oil to bind and create a glossy finish. Taste and adjust salt, acidity (more lemon or pomegranate molasses), or heat.
Transfer to a serving bowl and set aside at room temperature for 10–15 minutes to let flavors open.
Assembly & Serving
Warm the pita bread briefly in a dry skillet, oven (175°C / 350°F for 3–5 minutes), or toaster until pliable and slightly puffed. Cut each pita into halves or wedges as desired.
Arrange small bowls of hummus, tzatziki and muhammara on a platter. Place warmed pita, carrot sticks and cucumber sticks alongside.
Drizzle a little olive oil over the dips if desired and garnish hummus with smoked paprika and a sprinkle of chopped parsley over any dips you like.
Serve immediately. Leftover dips keep covered in the refrigerator for up to 4 days (tahini-based hummus and yogurt tzatziki may thicken — stir in a little water or lemon if needed).
