Method

Heat water to lower temperature
Bring water to a boil then let it cool to about 75–80°C (170–176°F). If you have no thermometer, let boiling water sit 3–5 minutes.
Pre-warm vessel
Rinse your teapot or cup with a little hot water and discard to stabilize temperature.
Oolong Tea - Floral Cup
Heat water to medium
Heat 220 ml water to about 85–90°C (185–194°F). Let boiling water cool for 1–2 minutes.
Pre-warm and rinse
Warm the teapot or gaiwan with hot water briefly and discard the rinse water.
Rinse leaves (optional)
For high-quality oolong, you can do a quick 5–8 second rinse: pour a small amount of hot water over the leaves, then discard the liquor. This opens the leaves and removes dust.
Steep
Place 2 tsp oolong leaves in the pot, pour 220 ml water and steep for 2–3 minutes for the first infusion. Oolong can be re-steeped multiple times; increase steeping time by 15–30 seconds on subsequent brews.
Serve
Strain the leaves. Add optional sweetener to taste and enjoy while warm.
Herbal Tisane (Chamomile) - Caffeine-free Cup
Boil water
Bring 250 ml fresh water to a full boil (100°C / 212°F).
Steep chamomile
Place 1.5 tsp dried chamomile flowers into the infuser or cup. Pour the boiling water over the flowers and steep for 5–7 minutes for a calming, aromatic infusion.
Finish
Remove the flowers. Sweeten with 1 tsp honey if desired. Serve warm.
General Tips & Serving
Use fresh, cold water (filtered if possible) for the best flavor. Measure tea by teaspoons for one cup; adjust leaf quantity for personal strength preference. Always adjust steeping time and water temperature by tea type to avoid over-extraction (bitterness) or weak brew. Serve immediately and enjoy. Keep extra leaves stored in an airtight container away from light, heat and strong smells.
