Prepare Glass & Cordial

Chill glass

Place a highball or tall beer glass in the freezer for 5–10 minutes or fill with ice water while you prepare the cocktail to ensure the drink stays cold.

If you don't have ready honey syrup, combine equal parts honey and hot water (for this drink: 0.5 oz honey + 0.5 oz hot water), stir until fully dissolved, then cool briefly.

Mix Cocktail

Add 1 cup of ice to the chilled highball or tall beer glass (or use a single large cube).

Pour 1.5 oz London dry gin, 0.5 oz fresh lemon juice, and 0.5 oz honey syrup into a cocktail shaker filled with a few ice cubes. (This small shake slightly chills and blends — the beer will be added separately so it doesn't foam excessively.)

Shake briskly for about 8–10 seconds to chill and dilute slightly. Strain the mixture into the prepared glass over the ice.

Slowly top the glass with 12 oz (one can) of Fairweather Donna (light lager or pilsner). Pour gently down the side of the glass to retain carbonation and minimize foam. Leave about 1/2 inch head.

Stir once gently with a bar spoon 2–3 rotations to integrate the beer and spirit without flattening the beer.

Garnish & Serve

Express the oils of the lemon wheel by squeezing it gently over the drink, then drop the wheel onto the rim or float it on top.

Slap the mint sprig between your hands once to release aroma and place it as a garnish beside the lemon wheel (do not muddle — you want aromatic lift).
