Prepare the Beef

In a skillet over medium heat, add the ground beef and cook until browned. Drain excess fat. Stir in taco seasoning and a splash of water. Simmer for about 5 minutes.

Prepare the Enchiladas

Preheat the oven to 375°F (190°C). In a separate bowl, mix 1 cup of shredded cheese with the refried beans. Fill each corn tortilla with the mixture, roll them up, and place them seam-side down in a baking dish. Top with remaining cheese and bake for 20 minutes.

Make the Spanish Rice

Prepare accordance to package instructions, usually by boiling rice with water and a little salsa or seasoning for flavor.

Assemble the Tacos

Fill each taco shell with the seasoned beef, and top with salsa, sour cream, and chopped cilantro.

Serve

On each plate, serve a taco, an enchilada, a scoop of Spanish rice, and a side of refried beans. Enjoy your Kid's Combo!
