Grilled fajita chicken or steak folded into a large warm grilled tortilla with fresh mixed greens, pico de gallo and shredded creamy mozzarella cheese. Served with Spanish rice and ranch dressing.

Marinate the chicken breast or steak in olive oil, fajita seasoning, salt, and pepper for at least 30 minutes.

Prepare the Chicken or Steak

Preheat the grill over medium-high heat. Grill the marinated chicken or steak for about 6-7 minutes per side, or until fully cooked. Remove from the grill and let it rest for a few minutes before slicing it into strips.

Grill the Protein

In a skillet, add a little olive oil and sauté the sliced bell peppers and onion until they are tender, about 5-7 minutes.

Sauté the Vegetables

Warm the tortillas on the grill for a few seconds on each side. Lay the grilled protein, sautéed vegetables, mixed greens, pico de gallo, and shredded mozzarella cheese in the center of each tortilla.

Assemble the Wraps

Fold in the sides of the tortilla and then roll it up from the bottom to enclose the filling.

Wrap It Up

Serve the fajita wraps with Spanish rice and ranch dressing on the side.
