French Toast

Method

French Toast

  1. 1

    Make custard

In a wide shallow bowl or baking dish large enough to dip bread (at least 9x13"), whisk together 4 large eggs, 1 cup whole milk, 1/4 cup heavy cream, 2 tablespoons granulated sugar, 1 teaspoon vanilla extract, 1/2 teaspoon ground cinnamon, and 1/4 teaspoon fine salt until smooth and slightly frothy.

  2. 2

    Preheat pan

Place a large nonstick or cast-iron skillet over medium heat. Add 1 tablespoon unsalted butter and 1 teaspoon neutral oil to the pan and let the butter melt and foam, coating the surface. Reduce heat to medium-low if butter starts to brown too quickly.

  3. 3

    Dip bread

Working with one slice at a time, submerge each bread slice in the custard for 10–15 seconds per side, pressing gently so the bread soaks up custard but does not fall apart. Let excess drip back into the bowl.

  4. 4

    Cook

Place soaked slices in the preheated skillet (do not overcrowd; cook in batches if necessary). Cook 2–3 minutes per side until golden brown and set, adjusting heat as needed so the centers cook through without burning the outsides. Add remaining 1 tablespoon butter between batches and a little oil if needed for browning.

  5. 5

    Keep warm

Transfer finished French toast to a baking sheet set in a 200°F (95°C) oven to keep warm while you cook remaining slices.

Breakfast Meat

  1. 6

    Bacon (if chosen)

For bacon, preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top if available. Arrange bacon slices in a single layer and bake 12–18 minutes depending on thickness and desired crispness. Drain on paper towels and keep warm. Alternatively, cook bacon in a skillet over medium heat 6–10 minutes, turning occasionally.

  2. 7

For sausage links, heat a skillet over medium heat with 1 teaspoon oil. Add links and cook 10–12 minutes, turning often, until browned and cooked through to 160°F (71°C).

  3. 8

    Canadian bacon (if chosen)

For Canadian bacon, heat a skillet over medium and cook slices 1–2 minutes per side until lightly browned and heated through.

Toppings & Serving

  1. 9

Arrange 2 slices of French toast per serving on plates. Dust each serving generously with powdered sugar (about 1/2 tablespoon per serving). Add a pat of butter if desired and serve with maple syrup (about 2 tablespoons per serving) and fresh berries on the side.

  2. 10

Serve with 2 slices of cooked bacon, or 2 sausage links, or 2 slices Canadian bacon per plate (adjust according to chosen meat).
