    Make batter

    In a large bowl whisk together 1.5 cups flour, 2 tsp sugar, 2 tsp baking powder and 1/2 tsp salt. In a separate bowl whisk 1.25 cups milk, 1 large egg, 3 tbsp melted butter and 1/2 tsp vanilla until combined. Pour wet into dry and gently stir until just combined — a few small lumps are fine. Let rest 5 minutes.

    Heat pan

    Heat a nonstick skillet or griddle over medium heat (about 375°F / medium). Lightly brush with the 1 tbsp oil or a little extra butter so surface is evenly coated.

    Cook pancakes

    For each pancake, pour about 1/3 cup batter onto the hot skillet to form a 5- to 6-inch pancake. Cook until bubbles form across the surface and edges begin to set, 2–3 minutes. Flip and cook until the second side is golden, 1–2 minutes more. Repeat to make three pancakes, adding a little more oil/butter if needed. Keep pancakes warm on a plate tented with foil or in a low oven (200°F/95°C).

Eggs

    Prepare pan

    While pancakes are cooking or resting, heat a 8–10 inch nonstick skillet over medium-low. Add 1 tsp butter or oil and let it melt and coat the pan.

    Cook eggs any style - fried (sunny-side or over-easy)

    Crack 2 large eggs into the pan. Season with 1/4 tsp salt and 1/8 tsp black pepper. For sunny-side up: cook covered for 2–3 minutes until whites are set but yolks runny. For over-easy: cook until whites set, flip gently and cook 15–30 seconds more for runny yolks; longer for firmer yolks.

    Cook eggs any style - scrambled (alternative)

    Alternatively, beat the 2 eggs with a pinch of salt and pepper. Pour into the pan over low heat and stir gently until soft curds form, 1.5–3 minutes. Remove from heat when slightly underdone for a moist finish.

    Keep warm

    Transfer eggs to the plate with pancakes and keep warm briefly until serving.

Breakfast meat

    Bacon

    If using bacon strips: place 3 strips in a cold skillet, then turn heat to medium. Cook 6–10 minutes, turning occasionally, until crisped to your liking. Drain on paper towel.

    If using sausage links: heat a skillet over medium and add 2 links. Cook 8–12 minutes, turning occasionally, until browned and cooked through. Cut in half if desired.

    Ham

    If using a ham slice: heat 1 tsp butter in a skillet over medium and sear the ham slice 1–2 minutes per side until browned and warmed through.

To finish & serve

    Assemble three pancakes on a plate, add 1 tbsp butter on top so it melts. Place the two eggs beside the stack and the chosen breakfast meat. Serve with 1/4 cup maple syrup on the side for pouring. Offer salt and pepper at the table.
