Burger Patties

    Form patties

    Divide the 1 lb ground beef into two equal portions (about 8 oz each). Gently form each portion into a round patty about 3/4"–1" thick and slightly wider than the bun. Do not overwork the meat — press gently and create a slight dimple in the center of each patty to help them cook evenly.

    Season both sides of each patty with 1/2 tsp kosher salt and 1/2 tsp freshly ground black pepper. If using Worcestershire, mix 1 tsp into the ground beef before forming patties for extra umami (optional).

    Heat a heavy skillet or grill over medium-high heat and add 1 tbs vegetable oil to the pan if using a skillet. When shimmering/hot, add the patties. Cook without moving for 3–4 minutes until a brown crust forms.

    Flip the patties and immediately place 2 slices of cheddar on each patty. Cook an additional 3–4 minutes for medium (adjust 1–2 minutes for less/more done). Remove patties to a plate and tent loosely with foil to rest for 3–5 minutes.

Bacon & Toppings

    Cook the 4 bacon strips in a skillet over medium heat until crisp, turning occasionally, about 7–9 minutes depending on thickness. Transfer cooked bacon to a paper towel-lined plate to drain.

    While bacon is cooking (or in parallel), slice the tomato into 1/4"–1/2" thick rounds. Season the tomato slices lightly with 1/4 tsp salt and 1/4 tsp black pepper.

    Halve and pit the avocado. Slice or fan the avocado and season with the remaining 1/4 tsp salt and 1/4 tsp black pepper. Keep slices intact so they are easy to assemble.

    Rinse and dry the lettuce leaves and keep them whole for assembly.

Buns & Sauce

    Slice the 2 burger buns in half. Spread 1 tbs butter on each cut face. Toast the buns, cut-side down, in a dry skillet over medium heat (or under a broiler) until golden and lightly crisp, about 1–2 minutes. Watch closely to prevent burning.

    In a small bowl, combine 4 tbs mayonnaise with 1 tsp Dijon mustard (if using) and stir until smooth. Taste and adjust — this is the burger mayo spread.

Assembly & Serving

    Place the toasted bottom bun on a plate. Spread about 1 tbs of the mayo mixture on the bottom bun.

    Place a lettuce leaf on the mayo, then add a cheese-topped burger patty.

    Top the patty with two bacon strips, then arrange 2–3 slices of seasoned avocado over the bacon.

    Add 1–2 tomato slices on top of the avocado, then spread 1 tbs mayo mixture on the inside of the top bun and place it over the tomato to finish the burger.

    Press gently, cut in half if desired, and serve immediately with fries or a side salad. Makes 2 burgers.
