Wash and dry the romaine lettuce leaves; chop or tear into bite-sized pieces to yield about 6 cups. Place in a large mixing bowl.

Shave or thinly slice red cabbage and finely chop celery. Add both to the bowl with the romaine and toss gently to combine.

Crispy Chicken

Prepare chicken

If breasts are large, halve them horizontally to make 4 thinner cutlets (about 4 pieces total). Lightly pound to even thickness (about 1/2 inch).

In a bowl, combine buttermilk and 1 tablespoon hot sauce. Submerge chicken in the mixture, cover, and refrigerate for at least 30 minutes (or up to 4 hours) to tenderize and add flavor.

In a shallow dish, whisk together flour, cornstarch, paprika, garlic powder, onion powder, 1 tsp salt, and 1/2 tsp black pepper.

Heat vegetable oil in a heavy skillet or deep pan to 350°F (175°C). If you don't have a thermometer, the oil should shimmer and a pinch of flour sizzles immediately.

Remove chicken from buttermilk, letting excess drip off, then dredge thoroughly in the flour mixture, pressing to adhere. Shake off excess.

Fry chicken pieces in batches so they do not crowd the pan. Cook 3–4 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Transfer to a wire rack set over a sheet pan to drain and keep crispy.

If desired, pat chicken lightly with paper towel and cut each piece into 1/2-inch strips for plating.

Spicy BBQ Sauce

In a small saucepan over low heat, combine ketchup, brown sugar, apple cider vinegar, Worcestershire, smoked paprika, hot sauce, minced garlic, and 1/4 tsp salt.

Warm gently, stirring until sugar dissolves and sauce thickens slightly, 4–6 minutes. If too thick, add up to 1 tablespoon water to reach a sauce consistency. Taste and adjust heat or sweetness to preference.

Reserve about 2–3 tablespoons of the sauce to toss with the cut chicken strips (if using) and keep remaining sauce for drizzling on the salad.

Bleu Cheese

Crumble bleu cheese if not pre-crumbled. Toss approximately half of the crumbles with the dressed salad just before plating for pockets of flavor; reserve remaining crumbles for garnish.

If using homemade bleu cheese dressing, taste and adjust seasoning. Otherwise have the store-bought dressing ready to drizzle or serve on the side.

Assembly & Finishing

If you reserved 2–3 tablespoons of spicy BBQ sauce, toss the cut crispy chicken strips gently in that sauce to coat lightly. Alternatively, drizzle sauce over the chicken after placing on the salad.

Add the sauced chicken strips on top of the romaine, cabbage, and celery mixture.

Drizzle bleu cheese dressing over the salad (about 1/2 cup divided among servings) and sprinkle remaining bleu cheese crumbles on top.

Season with the remaining 1/4 tsp salt, 1/4 tsp freshly ground black pepper, and optional 1/2 tablespoon lemon juice to brighten flavors. Give a very light toss if serving family-style, or leave composed for individual plating.

Serve immediately so the crispy chicken remains crunchy and the salad stays crisp.
