Form patty

Divide ground Wagyu into a single 1/3 lb portion (approximately 150 g). Gently form into a patty about 3/4" thick and slightly wider than the bun. Do not overwork the meat. Make a shallow indentation in the center with your thumb to help it cook evenly.

Season

Season both sides of the patty with kosher salt and freshly ground black pepper immediately before cooking.

Cook patty

Heat a heavy skillet or cast-iron pan over medium-high heat until hot (about 3–4 minutes). Place the patty in the dry pan (or with a teaspoon of neutral oil if your pan is not well seasoned). Cook 3–4 minutes on the first side without moving to develop a good crust. Flip and cook another 2–3 minutes for medium doneness (adjust time if you prefer rarer or more well done). During the last 60 seconds of cooking, place the cheddar slice on top of the patty and cover the pan or tent with foil to melt the cheese.

Cook bacon

While the patty is resting, cook the bacon until crispy. In a separate skillet over medium heat, lay the two strips and cook 3–5 minutes per side until browned and crisp. Transfer to a paper towel-lined plate to drain.

Heat onion rings

Prepare onion rings according to package instructions if using frozen (usually bake or fry). For fresh/hand-battered rings: heat oil to 350°F (175°C) and fry 2–3 minutes until golden and crisp, then drain on paper towels. Keep warm.

Toast buns & assemble sauce

Spread butter on the cut sides of the brioche bun and toast in a skillet or under a broiler until golden, about 1–2 minutes. Warm the smoky barbecue sauce slightly if desired (microwave 10–15 seconds) for easier spreading.

Assemble burger

On the bottom bun place lettuce and tomato slices if using. Set the melty Wagyu patty with cheddar on the bun. Spoon 1 to 1 1/2 tablespoons smoky barbecue sauce over the cheese. Lay the two crispy bacon strips atop the sauce. Place 2–3 onion rings over the bacon (stack for height and crunch). Cap with the top brioche bun.

Finishing

Serve the Blarney Burger immediately while hot and juicy. Recommend a side of fries or a small salad. If plating for service, secure the burger with a cocktail pick to hold the onion rings in place.
