Grilled, with Manchego potato puree
In a bowl, mix olive oil, lemon juice, salt, and black pepper. Coat the salmon fillets with this mixture and let them marinate for at least 30 minutes.
Preheat the grill to medium-high heat. Place the marinated salmon fillets on the grill and cook for about 4-5 minutes on each side, or until the salmon is cooked through and has nice grill marks.
While the salmon is grilling, boil peeled potatoes in salted water until tender. Drain and mash the potatoes. Stir in grated Manchego cheese, a splash of cream, and salt to taste until smooth and creamy.
Serve the grilled salmon on a bed of Manchego potato puree. Optionally, garnish with fresh herbs or lemon wedges.
