Prepare the Oysters
Rinse the fresh oysters under cold water. If they are in the shell, shuck them carefully, keeping the meat intact.
Make the Batter
In a large bowl, mix together the flour, cornmeal, salt, black pepper, and cayenne pepper. In another bowl, whisk together the eggs and milk.
Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Oysters
Carefully add the coated oysters to the hot oil in batches, frying for about 2-3 minutes or until golden brown. Remove and drain on paper towels.
Serve
Serve the fried oysters hot with your choice of dipping sauce, such as tartar sauce or hot sauce.
