Mixing the 7up-style Lemon-Lime Soda
Add ice cubes to the chilled glass, filling it about 3/4 full (approximately 6 medium cubes).
Pour the carbonated water (300 ml) over the ice gently to preserve bubbles.
Add the simple syrup (20 ml) to provide sweetness. If you prefer a lighter soda, reduce to 10–15 ml; for a sweeter profile, increase to 25–30 ml.
Add fresh lemon juice (10 ml) and fresh lime juice (10 ml). These small amounts contribute fresh citrus brightness without overpowering the soda. Stir gently once with a bar spoon (3–4 slow turns) to incorporate without flattening carbonation.
If using natural lemon-lime extract or flavor, add 1–2 drops (up to 2 tsp as listed if using a culinary flavor concentrate sparingly). Start with very little — extracts are concentrated — and adjust to taste. Stir gently once more.
Taste and adjust: if too tart, add another 5–10 ml simple syrup; if too sweet, add 10–20 ml additional carbonated water. Avoid vigorous stirring to keep carbonation.
