Warm and infuse
In a medium saucepan, combine the canned coconut milk, creamed coconut, evaporated milk, and a cinnamon stick. Warm gently over low heat until the creamed coconut dissolves and the mixture is hot but not boiling (about 5–7 minutes). Stir frequently to prevent scorching. Remove from heat and let the mixture steep, covered, for 15 minutes to allow the cinnamon flavor to infuse.

Temper and cook (if using raw yolks)
If using egg yolks and you prefer to temper them for safety and a richer texture: whisk the 4 egg yolks in a medium bowl. Slowly ladle about 1/2 cup of the hot milk mixture into the yolks while whisking constantly to temper. Pour the tempered yolks back into the saucepan with the remaining milk mixture and cook over low heat, stirring constantly, until the mixture slightly thickens and coats the back of a spoon (about 3–4 minutes). Do not boil. Remove from heat and strain through a fine-mesh sieve to remove any cooked bits and the cinnamon stick.

No-egg option
If you prefer not to use eggs, skip the tempering step and simply strain the warm infused milk mixture through a fine-mesh sieve to remove the cinnamon stick and any solids. The texture will be slightly lighter but still classic.
Combine and blend

Pour the warm (but not hot) milk mixture into a blender. Add the sweetened condensed milk, vanilla extract, ground cinnamon, ground nutmeg, ground cloves (if using), white rum, and dark rum. Blend on medium-high for 30–45 seconds until fully combined and slightly frothy. Taste and adjust: if you want it sweeter, add a small amount of granulated sugar or more condensed milk and blend briefly again. If the mixture is too thick, add up to 1/4 cup cold milk or evaporated milk to thin.
Chill and marry flavors

Transfer the coquito to a clean glass bottle or airtight container. Seal and refrigerate for at least 4 hours and preferably overnight. Chilling allows the flavors to meld and the texture to smooth. Shake well before serving, as the mixture may separate slightly in the fridge.
Serve

Serve well chilled in small glasses. Garnish each serving with a dusting of freshly grated nutmeg and a small cinnamon stick. Coquito can be stored in the refrigerator for up to 7–10 days; shake before serving. Alcohol content will help preservation but discard if you notice off smells or flavor changes.
