    Prepare

    Chill a coupe or rocks glass by filling it with ice and water, or place it in the freezer. If using egg white, separate one egg and reserve half the white (about 0.5 unit). Prepare honey syrup by mixing equal parts honey and warm water until combined if you don't have it ready.

    Dry shake (if using egg white)

    In a cocktail shaker, combine 2 oz Appleton Estate Signature rum, 0.75 oz fresh lime juice, 0.5 oz fresh grapefruit juice, 0.5 oz simple syrup, 0.25 oz honey syrup, 0.25 oz orange liqueur, 2 dashes Angostura bitters and 0.5 egg white. Seal the shaker and dry-shake vigorously (no ice) for 12–15 seconds to emulsify and create foam.

    Shake with ice

    Add about 1 cup of ice to the shaker. Shake vigorously for 12–15 seconds until the shaker is cold to the touch (this chills and dilutes the drink).

    Strain and serve

    Dump the chilling ice from your glass (if used). Double-strain the cocktail through a fine-mesh strainer into the chilled coupe or a rocks glass over one large ice cube, depending on preference.

    Garnish

    Express the oils of a grapefruit twist over the drink and drop it in, or add a lime wheel on the rim. Optionally add a small dash of bitters on the foam for aroma and presentation.

    Notes

    This recipe balances Appleton Estate’s rich Jamaican rum with bright citrus and a touch of honey. Adjust honey and simple syrup to taste for desired sweetness. Omit the egg white for a lighter, unfoamed version.
