Dough Preparation
Activate the Yeast
In a small bowl, combine warm water (about 110°F or 43°C) and sugar. Sprinkle the active dry yeast over the top and let it sit for about 5-10 minutes until it becomes frothy.
Mix the Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour and salt until well combined.
Combine Ingredients
Make a well in the center of the flour mixture. Pour in the yeast mixture and olive oil. Mix with a wooden spoon until a rough dough forms.
Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. The dough should be slightly tacky but not sticky.
First Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1-1.5 hours or until it has doubled in size.
Shape the Dough
Once risen, punch down the dough to release air. Divide it into 2 equal portions for large pizzas or leave it whole for one extra-large pizza. Shape each portion into a ball.
Second Rise
Cover the dough balls with a damp cloth and let them rest for another 30 minutes before stretching out to your desired pizza size.
