Prepare the Focaccia Croutons

Preheat the oven to 375°F (190°C). Cut the focaccia bread into small cubes. Toss with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and bake for 10-15 minutes until golden and crispy.

Char the Lemon

Cut the lemon in half and grill or char it cut side down for about 2-3 minutes until caramelized. Remove from heat and set aside.

Make the Dressing

In a small bowl, whisk together the remaining 2 tablespoons of olive oil, minced garlic, salt, and black pepper. Add in the white anchovies and mix gently.

Assemble the Salad

In a large salad bowl, tear the baby romaine into bite-sized pieces. Add in the charred lemon juice (squeezed) and the dressing. Toss well to coat the leaves.

Serve

Top the salad with pecorino cheese shavings and the focaccia croutons. Serve immediately.
